Hassleback Chicken

1 skinless chicken breast
15g reduced fat green pesto
30g low fat mozzarella cheese
a small sprinkle of salt & pepper

Pre-heat the oven to gas mark 6 / 200c

Season the chicken breast with the salt & pepper.  Cut deep slits in the chicken breast at regular intervals.  Spread the pesto equally between the slits then divide the mozzarella and push it down inside the slits.  Place in a baking dish and cook in the oven for 40 minutes or until the chicken is thoroughly cooked.

Remove from the oven and serve with roasted vegetables or the side dish of your choice.
