Spinach, Red Onion & Cheese Quiche Flan

Spinach, Red Onion & Cheese Quiche Flan
(Serves 1 – 4SP on WW Freestyle)

2 eggs
1 mini tortilla wrap
11g light mature cheddar cheese, finely grated
25g baby leaf spinach, washed
1/2 red onion, chopped
1/2 tsp tomato purée
1/4 tsp garlic purée
Sprinkle of salt, black pepper & mixed herbs

Preheat oven at gas mark 5 / 180C

Mist a frying pan with Frylight 1cal spray.  Lightly fry the spinach and red onion for a few minutes until the spinach is wilted.

Crack the eggs into a mixing bowl, sprinkle with salt and black pepper.  Add in the spinach, red onion, tomato purée, garlic purée, mixed herbs and most of the cheese then mix together.

Get the mini tortilla wrap and press it down into a small flan or baking dish to form a bowl shape.  Pour the mixture into the tortilla wrap then sprinkle the remaining cheese on top.

Bake in the oven for 20-25 minutes until cooked through and golden brown.  Remove from oven and allow to cool. Serve with leafy side salad and enjoy!
