Salmon & Spinach Frittata

Salmon & Spinach Frittata
(Serves one – 0SP on WW 💜💙/ 6SP💚)

2 eggs
100g canned pink salmon 
25g baby leaf spinach, washed
1/4 onion, chopped 
1/4 tsp dried dill  
Sprinkle of salt, black pepper & garlic granules

Preheat oven at gas mark 5 / 180C

Mist a frying pan with Frylight 1cal spray.  Lightly fry the spinach and chopped onion for a few minutes until the spinach is wilted.

Carefully remove any bones from the salmon and place it in a mixing bowl.  Add the spinach & onions then the eggs and dill. Sprinkle with salt, black pepper & garlic granules then mix together.  Pour the mixture into a small flan or baking dish.

Bake in the oven for 15-20 minutes until cooked through and golden brown.  Remove from oven and allow to cool. Serve with leafy side salad and enjoy!
