
Red Pepper & Onion Mini Frittatas
(Makes 6 – 1SP for 3 mini frittatas on WW πππ)
2 medium eggs
20g reduced fat cheddar cheese, finely grated
1/2 red pepper, chopped
1/2 onion, chopped
1/4 tsp mixed herbs
A sprinkle of salt & pepper
Preheat oven at gas mark 5 or 180C
Mist a frying pan with Frylight 1cal spray. Lightly fry the red pepper and onion for a few minutes until slightly softened, then remove from the heat.
Crack the eggs into a mixing bowl, sprinkle with salt and black pepper. Add in the red pepper, onion, mixed herbs and cheese then mix together.
Evenly divided the frittata mixture into a 6 hole silicone muffin baking tray and bake in the oven for 15 mins. Remove from the oven and allow to cool before turning the frittatas out of the tray.
Serve with the side dish of your choice. The flavour of these frittatas may be adapted by adding different vegetables or cooked meats, just remember to count the smart points for any ingredients that are not zero smart points.
