Pesto Chicken En Croute

Pesto chicken en croute
(4SP on WW Freestyle)

1 medium chicken breast
20g reduced fat green pesto
1 soft tortilla wrap
A small sprinkle of salt & pepper
Frylight 1cal oil spray

Season the chicken breast with a small sprinkle of salt & pepper.  Mist a frying pan with oil spray and lightly fry the chicken breast on a low heat for approximately 10 minutes, turning halfway through.

Remove the chicken breast from the frying pan and evenly spread on the green pesto, covering both sides. Place the chicken breast in the middle of the tortilla wrap and gently fold the wrap around until you create a seal at the bottom.

Place it with the seal down on a baking tray and mist it with oil spray. Bake in the oven on gas mark 4/180c for 20 minutes until the wrap is golden brown. Remove from the oven and ensure that the chicken is fully cooked.
Allow to cool and serve with mixed vegetables or the side dish of your choice.

(I used a Santa Maria plain flour tortilla wrap for 3SP, remember to check the individual Smart Points for your choice of wrap).
