Chorizo & Cheese Stuffed Omelette

Chorizo & Cheese Stuffed Omelette
Serves 1 – (2SP on WW Freestyle)

2 medium eggs
2 thin slices chorizo sausage
12g reduced fat mature cheddar cheese
a pinch of salt, black pepper & mixed herbs

Crack the eggs in a bowl, add the salt, black pepper and mixed herbs and beat together.

On a medium heat, warm a non stick frying pan with 2 sprays of Frylight spray. Add the egg mixture and cook until the eggs have a slightly firm base. Place the chorizo and cheese on one side of the omelette and use a spatula to gently fold the other half of the omelette up to cover the chorizo and cheese. Allow the omelette to cook for another 30 seconds then use the spatula to flip it over. Fry for approximately 2 minutes until the eggs are fully cooked and the cheese has melted. Remove from heat and serve with the accompaniment of your choice.

These omelettes can be adapted with a variety of fillings, simply adjust the smart points accordingly.
