Chicken & Red Pepper Quiche

Chicken & Red Pepper Quiche
(2SP on WW Freestyle)

2 eggs
40g cooked & diced skinless chicken breast
80g quark (fat free soft cheese)
10g light mature cheddar cheese, finely grated
1/3 sliced red bell pepper
1/4 onion, chopped
1/2 tsp garlic purée
1/2 tsp tomato purée
Sprinkle of salt, black pepper & mixed herbs

Preheat oven at gas mark 5 / 180C

Place the quark, chicken, red pepper and onions in a mixing bowl.  Add the garlic purée, tomato purée and eggs.  Sprinkle with salt, black pepper and mixed herbs, then mix together until smooth.  Transfer mixture to a baking dish and sprinkle grated cheese on top.
Bake in the oven for 20-25 minutes until cooked through and golden brown.

Remove from oven and allow to cool.  Serve with a leafy side salad and enjoy!
