Homemade butternut squash soup & garlic bread

CC’s Simple Butternut Squash Soup
Serves 2 (0SP per serving)

1/2 a medium butternut squash – chopped
1/2 an onion – chopped
1/2 vegetable stock pot
1/2 tbsp tomato purée
1/4 tsp black pepper
1/4 tsp garlic granules
1/4 tsp mixed herbs
700ml cold water

Put cold water in a deep saucepan and bring to boil.  Add all ingredients to the boiling water, return to boil then simmer for 20 minutes.  Remove from heat and allow to cool.  Blend mixture with a hand blender until smooth.  If the soup is too thick, add a little boiled water until you reach your desired texture.

CC’s Garlic Bread
(6SP)

1 part baked petit pain
10g Flora Light spread
1/4 tsp garlic purée
A pinch of dried parsley

Preheat the oven to gas mark 4 (180C).  Mix together the Flora Light spread, garlic purée & parsley.  Make slits in the petit pain (be careful not to cut right throw).  Spread the mixture evenly between the slits.  Bake for 10 minutes, allow to cool then serve and enjoy!
