CC’s Carrot & Brown Lentil Dahl
Serves 2 (0SP per serving)

1 large carrot – diced
50g brown lentils
1/2 an onion – chopped
1/2 a vegetable or chicken stock pot
1/2 tbsp tomato purée
1 tsp curry powder (mild, medium or hot to suit your taste)
1/4 tsp black pepper
1/4 tsp garlic granules
1/4 tsp turmeric powder
1/4 tsp coriander leaf
500ml cold water

Lightly fry onions with Frylight in a saucepan. Add the water and bring to boil. Add in all the other ingredients, return to boil then simmer for 20-25 minutes. Remove from heat and allow to cool. Blend mixture with a hand blender until a lumpy consistency or your desired texture.
